Monica Wilde teamed with chef Vinod Kuruvilla and Susan Varghese at Indie Roots,Bathgate combining locally foraged wild foods with the best of Indian cooking. Set menu (drinks not included). I am really excited to be teaming up with the amazing chef Vinod and Susan of Indie Roots, Bathgate. Indie Roots is one of the central belt’s best kept secrets but the word is getting out. Winner of Spice 2017 for Best Menu Selection and finalist for Best Team, also Finalist in the Scottish Curry Awards 2017 and a Trip Advisor Certificate of Excellence. Inspired by the fresh seafood and spices of the Kerala coast of his childhood, fused with the Madras culinary heritage of his parents, Vinod trained as a chef with the prestigious Taj Hotel group. He later worked in Dubai and the Emirates, experimenting with Arabic cuisine, before opening his own restaurants. First in New Delhi, then Belfast and now Bathgate – just a 20 minute train ride from Edinburgh.

The beginning of May is a fabulous time for foraging in Scotland. The flavours of the spring abound in the hedgerows: wild garlic, wild leek, hedge mustard, bittercresses and cuckoo flowers. Scurvy grass, sea vegetables and others combine with spicy seeds saved over the winter – hogweed, alexanders, wild carrot. Try Indian cuisine as you’ve never tasted it before. Traditional foraged Indian dishes such as Sarson ka Saag – slow-cooked wild mustard greens, combined with Monica’s recipes – like Golpar Pakora made from young common hogweed shoots – elevated by Vinod into flavours that you’ve never imagined!

The evening will start at 7.00 following a set menu – be prepared to be surprised! Vegetarian option available as an alternative to Rabbit and Venison Curries, but please let us know when booking your ticket.

Travel from Edinburgh: Trains run from Edinburgh to Bathgate every 20 minutes and take 25 minutes. Take the 18:06 and walk from the station is 0.8 miles (about 15 minutes) or take the 18:23 and a 5 minute cab ride to arrive in time. Last train back departs 23:12.

Travel from Glasgow: Trains run from Glasgow to Bathgate every 15-20 minutes and take 43 minutes. Take the 17:48 and walk from the station is 0.8 miles (about 15 minutes) or take the 18:08 and a 5 minute cab ride to arrive in time. Last train back departs 23:12.
